FOOD FOR THE FUTURE: INNOVATIONS FROM QUINOA AND AMARANTH TO ADDRESS FOOD AND NUTRITION SECURITY

The Food for the Future Workshop introduces two ancient crops, quinoa and amaranth and discusses their potential to addressing food and nutrition security challenges. Agricultural innovations for their production and cultivation will be explored and novel products from quinoa and amaranth especially geared to cater for the gluten-free niche-markets will be presented. During the workshop, the optimization of resources and the creation of enabling environments for scaling up of food innovations will be considered.

During the Quinoa and Amaranth World Café, participants will embark on a gluten-free culinary trip from Finland to Peru and Kenya.
